Biscoff Blondies Recipe

These Biscoff blondies are perfectly indulgent with a delicious fudgy texture with a butter crunch of dark chocolate rounded off with the deliciousness of Biscoff.

Ingredients

  • 175g unsalted butter
  • 200g Demerara sugar 
  • 3 medium eggs
  • 175g plain flour
  • 100g darkchocolate chips 
  • 150g dark chocolate chunks 
  • Pinch of salt 
  • 12tsp biscoff paste 
    Topping
  • Biscoff paste
  • Biscoff biscuits

Method

  1. Melt butter in a pan and allow it to turn to a slightly nutty brown colour. Remove from heat and combine with sugar. 
  2. Place sugar and melted butter into a bowl and add eggs one at a time, combining well between each addition. 
  3. Add flour and salt and mix until nearly fully combined. Add the chocolate chips and chunks into the mix. Combine fully so flour and chocolate is incorporated. 
  4. Pour mix into lined tin, mine was 8inch square and bake at 160 degrees C for 25-30mins. You want a slight wobble in the centre when you take them out for these to be soft in the centre. 
  5. Leave to cool fully in the tray before placing on a wire rack to cool fully before transferring to the fridge for 1-2 hours. 
  6. Top with more Biscoff paste and some Biscoff biscuits, then slice and enjoy!
