Fluffy American Pancakes with Blueberry Compote

These pancakes are deliciously light and fluffy! Perfect for flipping, stacking and eating. Topped with a deliciously simple blueberry compote, they are the best way to start the day.

Ingredients

  • 200g self raising flour
  • 1.5tsp baking powder
  • 30g caster sugar
  • 1tsp flaked sea salt
  • 3 large eggs
  • 200g buttermilk
  • 40g melted butter, plus extra to fry
  • 1tsp vanilla extract

Method

1.Whisk the flour, baking powder, sugar and salt together.
In a separate bowl, whisk the buttermilk, eggs, melted butter and vanilla.

2.Pour the wet ingredients into the dry ingredients and whisk until combined and the batter is
smooth.

3.Heat a frying pan on medium with some butter. Once heated, pour a ladle of the batter into the pan and cook until bubbles form on the surface (around 2-3mins). Flip the pancakes and cook on the other side for another 2-3mins or until golden brown.

4.For the mixed berry compote, place berries into a pan and heat on medium until defrosted and broken down. Continue to heat for 5-10mins until reduced and thickened.

5.Serve with your choice of toppings
