Hazelnut Praline Recipe

Praline is such a simple thing to make once you are aware of the stages and there are very few ingredients but the impact it can have on any bake is incredible. I cannot get enough of this stuff!

Method

  1. Roast the nuts in a trey for 5mins or until lightly golden at 160C.
  2. Sprinkle a quarter of the sugar into a pan on medium-low. As the sugar begins to dissolve continue to sprinkle until all sugar is in the pan.
  3. Heat the sugar until all the sugar has dissolved and it reaches a deep golden colour. Pour the caramel onto a trey covered in greaseproof paper and sprinkle on the salt. Allow to set and cool fully. 
  4. Place the nuts and caramel into the food processor and blend until it reaches a paste, occasionally scraping down the sides.
